I can’t gather everything before the end of the month, can I still drop off only what I have?

Yes, you can do that! 

However, if you do that, you will have to wait until CAF sends you a letter with your personal ID number so you can drop off the documents you couldn't drop in the first place WITH your ID number on it otherwise, they will never track you back!
